This is not a spicy loaf- it’s a deeply savory, rich sourdough inspired by traditional Oaxacan mole. Made with heritage and ancient grains, and infused with mole, warm spices, garlic, sesame, chiles, nuts, and a touch of sweetness for balance.
To bring even more depth of flavor, we add macerated prunes, which melt into the crumb and provide subtle sweetness, moisture, and notes similar to dried fruit, cacao and caramelized sugar.
